### Steph runs this exciting company with her partner (and soon-to-be husband) Dan, who came from very different backgrounds. Dan was a chef for many years, working in high end kitchens for chefs such as Heston Blumenthal and Steph worked for charities, doing fundraising, events and marketing. The idea for ChilliDogs came from Dan’s epic chilli con carne that he was famous for making whenever they had anyone round! Their ‘pots ‘o’ chilli’ soon turned into a chilli dog after they made contact with a local smokehouse who could make a hot dog to their exact dream recipe. Steph began ‘volunteering’ for ChilliDogs at the weekends and eventually quit her job completely a few years ago to work full time with her fiance.

Steph and Dan wanted to make sure that their hot dog recipes and tastes were flawless before they started trading… 

*__“The first chilli dog was sold in May 2014, but development started in 2013. It took us a few months and several ‘sausage tastings’ with family and friends to create our perfect dog!”__*

*__“Dan had worked as a chef for over 8 years in various high-end restaurants and he’d reached a point where he realised he didn’t want to spend his whole life in the confines of a crazy kitchen. Living in London at the time, we saw the huge growth of the street food industry and felt it would be a way to use Dan’s skills, whilst allowing him to do his own thing, spend time outside of the kitchen and actually interact with the people enjoying his food.”__*

Steph and Dan’s lives were very different before ChilliDogs… 

__*“I worked for a children’s charity in their marketing and fundraising team, which gave me my love of everything events! Dan was a chef working for the likes of Heston Blumenthal and Daniel Galmiche. Before ChilliDogs we barely saw each other as Dan often worked 18+ hour days… now we spend every waking minute with each other!”* __

 
The ChilliDogs branding is all about being familiar, fun and honest… 

*__“We were lucky enough to be given a mentor through the Virgin Start-Up scheme who specialises in branding. He helped us to really think about our ideal customer and how to use this insight to build a strong brand, based around being a little cheeky, but also really genuine! We wanted to pitch our chilli dog as being the rebellious older brother of the hotdog.”__*

Steph described the first three essential steps in getting their street food business set up… 

__*“First we had to decide on a menu that was a bit different but not too ‘out there.’ Then we found events to trade at, which was the trickiest bit. Finally, we worked out what bare essential equipment we needed and bought it!”*__

 
We asked Steph if there have been any bumps in the road on the ChilliDogs journey… 

__*“The first van we purchased gave us such a headache as it constantly broke down, but at the time we couldn’t afford to buy a new one. We continued to pump money into it, only for it to continue to let us down. We’ve also had issues with 50mps winds as well as equipment breaking and deliveries not turning up during mega busy events… but it’s all part of the job!”*__

 
But there have also been many really exciting and inspiring days… 

__*“Our highlight so far was trading at the NFL Twickenham. It was the most mental day ever, but we smashed our record and had a lot of fun working as a team.”*__

__*“We’ve catered for a wide range of events, from a 4 day Indian wedding to the ASOS Black Friday staff incentive. I guess because our menu is so versatile and wide-reaching, we get asked by all sorts of people.”*__

__*“We love family events with a mix of ages and personalities! We also find our menu works well at events looking to feed large numbers in a small space of time, as we are able to serve over 350 portions of food per hour.”*__

Our signature Chilli Cheese Dog is one of our heft dogs in a brioche bun, generously topped with our slow-cooked beef chilli and silk real cheese fondue, with a choice of crispy onions and jalapeños to spice things up. Our nachos give those avoiding gluten a great option. They come with a choice of smoky black bean chilli, which is vegan, or beef chilli with cheese fondue and the option to add fresh guacamole.”*__

## In their one year of working order, BEYRoots have catered for numerous parties and weddings, as well as putting smiles on the faces of Londoners in office buildings and markets across the capital. They’ve also spread the Lebanese love at food and music festivals, like the Brighton Food Festival and Lost Village. BEYRoots is owned and run by Tariq Al Khaldi, who brings Lebanese food to the people of Britain in his outstanding Citroen HY van, which is named Imad, after his late father. Tariq went from slogging away as an architectural engineer, to loving life with Lebanese wraps in just a matter of months. He’s a pretty inspirational foodie entrepreneur, so we just had to speak to him to find out more…

My family was all centralised around Lebanon and I would always visit my cousins and my dad’s siblings (my dad was the youngest of 9). I loved every minute of it and really embraced Lebanese culture.”*

Inspired by overwhelming love for his country, the recipes of his childhood and his beloved father, Tariq created [BEYRoots](https://feast-it.com/vendors/beyroots) in April 2017. 

#### *“My father passed away really suddenly from a heart attack in December 2015, he was only 60. It was really unexpected for us as he was fit and healthy. We both shared a passion for cars and classic vehicles and he would always talk about getting a Classic Citroen H van and driving around London selling falafel. In his opinion, no one in London did falafel the way it’s done in Lebanon and I was inclined to agree with him. When he passed away I knew it was now or never and I decided to quit my job and follow his dream with a bit of mine mixed in.”*

He’d had enough of the corporate life and longed to forge his own path… 

#### *“I used to be an architectural engineer, working for engineering consultancies on all sorts of construction projects from Mandarin Oriental to Crossrail. It got to a point where I was starting to lose passion for what I was doing and I was spending more and more time in Lebanon and with my Lebanese friends because I really missed my dad.”*

Tariq was nervous to take the plunge into creating his own street food business and there were a few unexpected bumps in the road… 

#### *“It was a worrying few first steps with a lot of hiccups on the way. I bought the van in April 2017 and on June 21st, a week before our first session, I was knocked off my motorbike and my leg was hit by an oncoming car, resulting in a compound fracture in my left tibia and fibula. Recovery was long, hard and painful, but I put my mind to it and managed to do a trial serving session on 31st August which went well. I then dove in with both feet, serving 3-5 times a week.”*

 

Lebanese culture plays a huge part in Tariq’s life…

#### *“I go back to Lebanon at least twice a year to visit friends and family. I also play rugby for the Lebanese National Rugby Team and have played for them for the last 4 years.”*

[BEYRoots](https://feast-it.com/vendors/beyroots) got its name from the airport code for Beirut Airport, mixed with the word ‘roots’. Tariq thought that seeing the name itself sounded like Beirut, customers would be quickly able to recognise what kind of food they served. The team is made up of Tariq’s close friend Matt, who he played rugby with at university. Tariq set up the business and the van himself, but after seeing its success, Matt is going to use his savings to invest in the next van!

#### *“Everything boils down to providing people with an inviting experience. Lebanese culture is all about making people feel welcomed. Lebanon is a country that people don’t know a huge amount about. It’s beautiful there - you can ski in the morning, get a tan at the beach in the afternoon and then have one of the best nights out of your life! You’ll eat some of the best food you’ll ever have there. You’ll see the ruins of ancient civilisations in Baalbeck and walk around the oldest inhabited city in the world at Byblos. You can drive to the Bekaa Valley to taste some of the world’s best wines in Ksara and Kefraya. It’s not a warzone anymore and I’m ready to portray it in the way that it deserves to be portrayed.”*

Her day-to-day can involve anything from hiring drag queens to organising pop-up bars for Gordon Ramsay’s restaurants, but one of the parts of the job she enjoys most is organising Christmas parties. I sat down with her and got the inside scoop on how best to plan a Christmas party that’ll blow your employees away.

__Curran: So Amy, when do companies need to start planning their Christmas parties?__

__Amy:__ We don’t often see bookings until about August when people come back from summer holidays, but ideally you’d book as early as January to make sure you can secure a good date for your party. If you leave it too late there will be no venues with Thursday or Friday slots available, they disappear fast. Also, don’t forget to communicate with the invitees! You want to make sure everyone saves the date because Christmas is such a busy time of the year.

__Curran: What are the things people always forget to arrange?__

__Amy:__ Staff and entertainment are key, they’re the things that people always forget to organise and if you don’t nail them then your party can just end up being another boozy night out. Get your thinking cap on and make the entertainment something special. 

I actually don’t think that great Christmas party entertainment has to be Christmas-themed. I worked on an awesome party which was Night Circus themed. It was quirky and in your face, but there were no Santa’s in sight! Really you just want to do something that’s a lot of fun.

__Curran: Does a meal out to a restaurant cut it these days?__

__Amy: __I think it can certainly make the cut - there are restaurants coming up with some really innovative Christmas menus in London and you have to cater for all budgets. Not everyone has £300 per head, lots of restaurants do great deals, especially if you book early, but if you have the budget, why not do something wild. You can go to a restaurant any day of the week after all!

__Curran: What type of venue works best?__

__Amy:__ If you’re able to, go for a blank canvas venue that has space for lots of embellishment. You want to make the venue into a total dreamland, so that people forget where they are and are totally in the moment. That’s much harder to do with a space that has a lot of it’s own character already, although if the vibe of the place fits your theme it could work well.

If you have a smaller budget, you can still make people feel like they’re in another world, some venues have a couple of pre-defined possible layouts and lots of kit around to totally make the place over, so checking about that first can save a lot of money and effort.

__Curran: How much do companies need to spend per head?__

__Amy:__ To make it a special evening, £100 per head is a really realistic budget, especially if the venue has some infrastructure itself. If you want to go to town and make it a night to remember, you’ll be looking in the region of £200-220 per head.

Picture the scene at a wedding, it's 1am and your guest's stamina is finally starting to flag. *When it comes to organising an event there can be so many moving parts that it be so easy to let something absolutely vital slip through net and find yourself scrabbling around to make sure that it all comes together at the last minute. 

*In the interest of making the planning process easier for everyone, __Feast It__ spoke to Abby, an event organiser at one of the UK's largest charities. She is involved in the organisation of around 20 large events per year so it's safe to say she's been through it all!
*

__*Hi Abby. So what are the very first steps that you take when going about starting to organise an event?*__


First of all, I work out the exact budget and try to identify areas where it could be possible to cut costs if necessary. Once that’s been established, firstly I’ll secure an awesome venue, secondly I’ll source the catering and then get cracking with selling tickets!

 
__*What are the three most important things to get absolutely spot on? (eg. catering, venue, entertainment etc)*__

First and foremost, it’s the venue because quite clearly without one there’s simply no event at all! Then it’s catering, the quality of which tends be a fairly direct representation of how much people will enjoy themselves, and I’ll also make sure that there won’t be any problems with accessibility at all, it’s one that people often tend to forget.

__*In what area do you tend to encounter the most problems when you're organising an event?*__

I work at a charity and the emphasis is on trying to keep costs as low as possible, whilst simultaneously delivering an enjoyable and high quality event that guests will remember and hopefully continue to support in the future. Although not a problem per se it is the ongoing challenge across the sector!

 
*__Is there one thing in particular that people tend to forget?__*

People can just be so busy they generally forget to send over their dietary requirements, meaning you need contingency plans on the day and caterers who are able to offer a bit of flexibility.

*__Would street food be an appealing option for a charity event? __*

It would be a really nice touch. Guests absolutely love to try something fun and different and street food allows you to be more creative and add a bit more diversity to proceedings. The fact that you can cater cheaply for multiple dietary requirements is also hugely appealing.

 
*__Do you have any stories of when things have gone wrong? __*

I once got locked in a dressing room with an unhappy celebrity compère for 20 minutes whilst I was meant to be managing an event! Not the best start to an evening!

 
__*What food do you personally think tends to go down the best at events you've organised?*__

I always try and choose something a bit unusual as people generally get a bit tired of standard dishes, particularly vegetarian options (I'd never pick the risotto) Recently I've found duck to be a popular choice and people tend to be moving towards more niche options. And everyone loves a chocolate pudding!

What to remember when planning an event

Bel Shapiro is the founder of Bell & Brisket, one of London’s best known street food traders serving a delicious modern take on pimped up salt beef bagels. Since they started out in 2011 they’ve won prizes from the London Lifestyle Awards, The Grab and Go Awards and placed in Time Out’s list of the top 10 dishes in London. So, you're thinking of setting up your very own street food business? You’ve got grand plans to serve incredible food to eager, salivating customers, happy to queue at your stall whatever the weather to buy your culinary creations to great acclaim and joyful feedback.

The good news is you can do this! And do it you will if you’ve got the belief, the desire and just that little bit of nous to got with it! However, it’s really difficult to get started without some essential behind the scenes tips of the industry, invariably involving a roll of gaffer tape, a chalk pen and an endless supply of cable ties. Here’s a potted list of the multi-tasking skills that you’re going to need if you’ve got plans to run a street food stall:

1.Appreciation of the Weather: It's an obvious one to start with, but you’ll become absolutely obsessed with the Met Office app. Wind is worse than rain, humorous though it is to see a gazebo fly through the air magic carpet style this is obviously a danger to the public. Make absolutely sure that you put weights at the feet of your gazebo before you do anything else. Cable ties can often be a godsend here. You’ve got to remember that bad days with the weather are just an inevitability, and the it’s the street food chef’s job to be able to cook through them!

2.Jack of all, each and every trade: You’re going to need to be an electrician (cable ties) plumber (gaffer tape) sign writer (chalk pen), accountant, gas engineer, mechanic, social media expert, carpenter, chef, kitchen porter, weight lifter, "Jenga" van packing expert, van driver, and need a large capacity for alcohol consumption (not while driving obvs). It’s incredibly hard work but the upshot is that you suddenly realise that you’re qualified for about fifty jobs when all you wanted to do was to be a chef.

3.A (very) cheery disposition: Street food traders love a good old moan to each other, but are salt of the earth and eternally optimistic to their customers. This is a skill not to be underestimated and, in a world where online reviews are becoming more and more important, increasingly vital to your business. No matter how tempting it may be (and it will be very tempting at certain points) always resist the temptation to go Basil Fawlty on the general public.

4.The show must, must, must go on: Even if all the wheels fall off your van, you are struck by lightening and your cat has died that very morning, you must, must, must still turn up at the market or the event. Street food isn’t a great place for people who tend to call in sick a lot.

5.The food. Almost not worth mentioning because obviously it needs to be amazing. It's worth remembering that the whole package is incredibly important; taste, presentation, originality. As general rules: less is more, forge your own path, don't copy anyone else's stuff...(doesn't go down well). Do one thing and do it really well.

Frankly the streetfood adventure is the best use of gaffer tape, cable ties and chalk pens you could ever possible think of. Go for it.
